The front leg — known as paleta — delivers the same rich, deep flavor as the back leg, just in a smaller cut. Because of its shape, it yields a bit less meat, which is why it comes at a more accessible price.
Our paleta comes from the famous Iberian pig, often called pata negra. The meat has a deep red color with fine streaks of natural fat running through it. This is what gives it its smooth texture and bold, unforgettable flavor.
Unlike the premium bellota version, these pigs are not fed on acorns. That’s what makes this option more affordable without losing the essence of what makes Iberian ham so special.
Slow cured to perfection
Great flavor takes time. This paleta is naturally cured for up to 24 months.
